Quinoa & Beet Salad
Speaking about healthy food and self-perfection, here's one of the recently discovered recipes I really like - Quinoa & Beet Salad. Super easy to make, super-tasty to eat :)
Ingredients:
1-2 beets,
1 cup quinoa
2 cups water
2 tablespoons of olive oil
1/2 cup red wine vinegar
2 teaspoons of salt
1/4 teaspoon ground black pepper
2 tablespoons lemon juice
2 green onions, sliced
feta cheese, crumbled
Directions:
Place beets in a large saucepan; cover with cold water (by about an inch). Add 1 teaspoon salt; bring to a simmer. Cook until beets are tender when pierced with a paring knife, 35-45 minutes. Drain; cover with cold water. Let sit until cool enough to handle. Peel and cut into 1/2-inch cubes.
Or you can just cook beets in steamer.
Place quinoa in medium saucepan; add water. Bring to a boil on high heat. Reduce heat to medium-low. Simmer, partially covered, for 10 to 15 minutes or until all the water is absorbed.
Combine cooled quinoa, sliced beet, green onion, feta cheese, lemon juice, olive oil and a pinch of salt and pepper in a large bowl. Drizzle with vinaigrette and toss gently to combine. Add beet and gently toss.
And there you are! A tasty and healthy salad is ready.

Need some motivation
Well, first of all let me introduce myself.
I'm Margarita, 26 y.o, originally from Russia, currently living in Israel.
I weight 68 kg and my height is 166 cm.
Everything far from perfect :)
One of my main goals at the moment is to loose some weight and reach a nice result of 60 kg. But as many other girls, I am: 1) lazy 2) love to eat tasty stuff.
Last year I weighted 74.4 kg and it was a disaster. I could barely look at pictures of me. Then there was our wedding coming. So I lost 12 kg to get my dream wedding dress which I did :)
But got relaxed after wedding again...and here we go..68 kg.
So to get some motivation for now, let's watch this video:
